Rush Hour - Puff Pancakes

The kids request this for Sunday morning conference breakfast at Cindy's house.

Puffy Pancake
4 large eggs
1 C whole milk (I have used 2%)
1 C all-purpose flour
2 T granulated sugar
1/4 tsp salt
2 T margarine or butter
Preheat oven to 425. Prepare pancake in blender. Place 10" iron skillet with oven safe handle in oven; heat until very hot. Remove skillet from oven and add butter and swirl until melted. Pour batter into hot skillet; bake 15 minutes or until puffy and golden.
Compote
2 bananas cut into 1/2 inch chunks
1 pint strawberries, sliced
1 T granulated sugar (I leave out the sugar)
1 T fresh lemon juice
Spoon compote onto pancake and serve sprinkled with powdered sugar.
