Strawberry Spinach Salmon Salad

(from Huntsman Cancer Institute Bistro)
Bed of spinach on plate
Scoop one very large spoon of each of the following around the edge of plate:
Strawberries - cut to bite size
Chopped nuts
Craisins
Feta Cheese
halved red grapes
 Add a portion of blackened salmon in the center and serve. Delish!

Smores in a Pan

3/4 cup karo corn syrup
3 TBSP Butter
1 box golden grahams
1 tsp vanilla
1 bag chocolate chips
3-5 cups mini marshmallows

Bring Karo, butter and vanilla to a boil then add chocolate chips till melted remove from heat.  Add mixture to golden grahams and mix in marshmallows till just melted. Pat in greased 9x13 pan cool in fridge.



Orange Rolls

36 frozen rhodes white dinner rolls thawed
1/2 cup butter melted
2 orange rinds grated
1 cup sugar
2 cup powdered sugar
4 TBSP fresh orange Juice
2 TBSP melted butter

Thaw rolls until soft (2 hours room temp or place in fridge night before) mix grated orange rind and sugar.  Cut rolls in half and place in 2 9/13 pans.  Pour 1/4 cup melted butter over each pan.  Sprinkle 1/2 orange rind/sugar mixture over both pans (1/4 on one pan) Cover with sprayed plastic wrap.  Let rise till double in size. sprinkle remaining orange rind/sugar mix over both pans.  Bake 350 for 20-25 min till light brown.  Then Glaze.  Glaze- mix together powdered sugar/butter/orange juice. makes 2 9x13 pans

Chicken in the Trees

20 oz frozen chopped broccoli-cooked
2 cups shredded cooked chicken
2 cans cream of chicken soup
1 cup mayo
1 cup shredded cheddar cheese
1/2 cup bread crumbs or ritz crackers or potato chips with 1 TBSP melted butter for topping

Spread broccoli on bottom of 9x13 pan then top with chicken. Mix together soup, mayo, and cheese then place on top of chicken. Top with topping or cheese.  Bake 350 for 20 min or till bubbly.  Serve over rice or potatoes.

White Chili

1 pound sausage or chicken
3 cans great white north beans
1 can rotel tomatoes
1 TBSP oil
1 med onion chopped
1 10 oz can chopped green chilies
2 tsp oregano
1 can chicken broth
1/2 tsp cayenne pepper (optional)

Saute onion in oil then cook sausage or chicken. Then add all ingredients to crockpot till heated.  20 min before serving add 3 cups Monterey jack cheese and 16 oz container or sour cream.

Curried Crab Salad

1 pound asparagus cooked then immersed in cold water-drain
1/2 pound crab meat broken into pieces (can use imitation crab)
1 cup chopped cucumber
1/3 cup mayo
1/4 cup snipped fresh chives
1 1/2 tsp curry powder
salt/pepper 
Mix all together serve cold

Cabbage Chicken Salad

1/2 head shredded cabbage
1 chicken breast cooked and chopped or shrimp
2 green onions chopped
2 TBSP chopped or slivered almonds
1/2 pkg roman noodles broken
Dressing Ingredients (mix and toss over salad)
2 TBSP sugar
1 tsp salt
3 TBSP white wine vinegar
1 TBSP red wine vinegar
1/4 cup olive oil
1/2 tsp pepper
